THE Innovation and Technology Centre (CIT) of Huelva, Spain is investigating new technologies to process strawberries. The CIT, cooperating with strawberry processor Hudisa, is working on new processing technologies to obtain purees and concentrates. The research also focuses on the by-products resulting from the process, like seeds, to evaluate possible uses in the food, pharmaceutical, cosmetic or other sectors. Hudisa is scheduled to open a new fruit processing plant in Huelva later this year (FOODNEWS 4 April).
