USDA needs to protect small processors, Tester says

Several actions either under way or under consideration by USDA's Food Safety and Inspection Service could inadvertently help large processors and hurt smaller ones, says Sen. Jon Tester (D-Mont.), in a two-page letter sent recently to Agriculture Secretary Tom Vilsack. Sen. tester takes aim at a list of items he feels are threatening the economic viability of small processors, including importing processed poultry from China, the acceptance of meat inspected under a modified system in Australia and Canada and the controversial HACCP-based Inspection Models Project (HIMP) pilots in poultry and swine plants.
