FSMA to help improve controls for allergens in food manufacturing, Gendel says

The Food Safety Modernization Act (FSMA) proposal to prevent food allergen contamination and cross contact will have a big effect on what constitutes good controls for allergens in manufacturing, predicts Steven Gendel, FDA’s food allergen coordinator at FDA. He provided an update on the allergen-related changes in a session at the Institute of Food Technologists annual meeting in New Orleans.
