While the pork and meat packing industry are urging USDA’s Food Safety and Inspection Service (FSIS) to finalize a proposed rule that would eliminate what they say are unnecessary requirements for hog carcass cleaning, consumer and animal welfare groups say the proposal violates the Federal Meat Inspection Act (FMIA) and presents an unacceptable risk of hurting consumers.
